Coffee cultivation goes back three generations for the Fallas Mora Family. The story begins with our grandfather Herminio Fallas Jiménez who was one of the pioneers in the production of coffee in our community.

Our grandfather cultivated and cared for his plantations for decades, passing all his knowledge to his son Eliécer Fallas Mena, our father, who inherited the coffee gene and promoted the production of high-quality coffee.

The older brother of the family, Deyner Fallas, has always been passionate about growing coffee and decided to found the Cerro Verde Microbeneficio in 2012 with the aim of processing our own beans.

The name Cerro Verde comes from its location in front of the El Dragón hill, which is known for its imposing beauty and particular green color.

The Cerro Verde micro-mill is located in the Zona de los Santos, in the coffee-growing region of Tarrazú, specifically in San Francisco de León Cortés. The farm and facilities are located at 1,930 meters above sea level.

The altitude, added to the characteristics of the soil, microclimate, detailed care of our plantations and artisan processing, result in a specialty coffee.

PROCESS

We are a microbeneficiation that cares about the conservation of the ecosystem that surrounds us.

During the harvesting process we make sure that the maturation is optimal to get the most out of the organoleptic properties of the grain. Once collected, we proceed to the artisan wet processing process. The microbeneficiation was created taking advantage of the relief of the terrain that works as a natural guide in the dragging of the fruit, using a circular water system and a mechanical mucilagination, a minimum consumption of water and electricity has been achieved.

Once the wet milling process is finished, the coffee is placed on African beds for a 100% drying of the grain in the sun until it reaches the ideal point of humidity.

Finally, we proceed to carry out the tastings in order to ensure quality for our clients. Once tasted, the coffee is left to rest in storage to later be distributed to our customers.
